Caramelized Tofu - 3/4 Buttons

Well, since I am a vegan I suppose I should proactively help the cause. I decided to become a vegan only a few months ago, and I am still very novice. I will try to post recipes that I try and enjoy.
This recipe comes from 101cookbooks.com. I have tried this dish and was pleasantly pleased. That is why it scores a 3 out of 4 buttons (buttons, referring to how you will have to loosen your pants after indulging). I am taking it one meal at a time and I bet most of you reading are not vegans, but all can enjoy this easy, yummy and interesting way to cook with tofu.
The recipe itself is really basic. Even the novice chef can tackle this dish.
Ingredients:
7 - 8 oz. of extra-firm tofu cut into 1 inch segments
A few pinches of sea salt
A tablespoon of olive oil or your preferred cooking oil
2 medium cloves are garlic, minced
1/3 cup pecans
3 tablespoons of brown sugar
1.4 cup cilantro, finely chopped
1.2 lb. brussels sprouts, washed and cut in quarters
Directions:
Cook the tofu with the oil and salt.
Cook until golden brown, ~4 minutes.
Add the garlic and pecans.
Stir in the brown sugar.
Cook for another couple of minutes.
Remove from heat.
Stir in cilantro.
Remove tofu so that you can cook brussels sprouts.
Cook brussels sprouts, mixing only a few times.
Aim to golden bits of the brussels sprouts.
Serves 2 as a main dish and up to 4 if used as side.
Now, I bet some of you are turned off by the brussels sprouts. I am willing to climb out on a limb and say that any green veggie would work. Try to keep the quantity as close to the original recipe as possible if you decide to try another veggie. This recipe is really easy, requires hardly any prep time and pleases all sorts of pallets, omnivore and herbivores alike!
